This sandwich is everything we love about Mediterranean cuisine: juicy tomatoes, fragrant basil, olives, sun-dried tomatoes, a drizzle of olive oil—and the magic touch? Our aged cashew cheese that adds depth, tang, and that unmistakable umami.

🥪 Mediterranean Kashew Cheese Sandwich Recipe

Ingredients (for 2 sandwiches):

  • 4 slices of Kashew Wholemeal or White Sourdough Bread (or a French baguette)
  • 100g Kashew Aged Cheese (Classic or Garlic & Herbs work beautifully)
  • 1 ripe tomato, thinly sliced
  • A handful of fresh basil leaves
  • 4–6 slices of sun-dried tomato
  • A handful of rucola or rocket leaves
  • A few Kalamata olives, pitted and chopped
  • Extra virgin olive oil
  • Optional: Kashew Chutney or Pesto
  • Salt & black pepper to taste

Instructions:

  1. Toast the Bread: Lightly toast your sourdough or baguette slices until golden and slightly crisp.
  2. Layer the Base: Spread a thin layer of pesto or chutney on the bottom slice of each sandwich.
  3. Add the Cheese: Slice or crumble the Kashew Aged Cheese generously across the bread.
  4. Build the Flavors: Add tomato slices, basil, sun-dried tomatoes, olives, and rucola.
  5. Finish It Off: Drizzle with olive oil, sprinkle salt and black pepper, and close the sandwich.
  6. Optional – Press & Toast: Grill or press for a warm, melty texture.

Serving Suggestion:

Pair with a glass of Kashew Kombucha or a light salad. Perfect for lunch, brunch, or a picnic under the sun.
