If there’s one thing that brings comfort and joy in every bite, it’s a perfectly grilled panini. At Kashew, we’ve reimagined this classic Italian café favorite using our Kashew Mozzarella—a spongy, meltable, dairy-free cheese that’s as delicious fresh as it is toasted to bubbly golden perfection.

This simple recipe combines the vibrant flavors of tomato and basil with the gooey magic of Kashew Mozzarella, pressed between two slices of artisan sourdough or French baguette.

🥪 Ingredients (for 2 paninis):

  • 4 slices of Kashew Sourdough Bread or 1 French Baguette, halved
  • 100g Kashew Mozzarella, sliced
  • 2 fresh tomatoes, sliced
  • Fresh basil leaves
  • Optional: Kashew Pesto or Olive Tapenade
  • Extra virgin olive oil
  • Salt & black pepper to taste

Instructions:

  1. Assemble the Panini: Spread pesto or tapenade on the bottom slice. Add tomato slices, basil, and Kashew Mozzarella.
  2. Season: Sprinkle salt and pepper.
  3. Close & Brush: Add the top slice and brush the outside with olive oil.
  4. Grill: Cook in a panini press or hot pan until golden and the cheese melts (3–5 minutes).
  5. Serve: Slice and enjoy warm.

Variations:

  • Add Kashew Aged Cheese for a tangy flavor boost.
  • Include grilled eggplant or zucchini for extra heartiness.
  • Top with chili flakes or sun-dried tomatoes for a bold twist.
